Dim Sum (点心) is a Chinese-Cantonese cuisine which is comes in small portion, normally eaten as breakfast or brunch. Dim Sum is very closely related to the tea culture, as old Cantonese saying: "Have a sip of tea, eat a hot steaming bun" (饮个茶、食个包). Cantonese are very particular in food, Dim Sum is just a small division in an authentic Cantonese cuisine. Do not be surprise how creative a Dim Sum Chef can be - any food ingredients can be made as Dim Sum as long as it fit into the following categories (but not limited to):
bun (or "pao"), mai (卖), cake (or "gou" 糕), roll (or "guen" 卷), kok (角), dumpling ("gao" 饺), steamed meats dishes, steamed gluteneous rice etc... etc.
Dim Sum can be steamed, pan fried, deep fried and chilled.
