Home-Cook: Nasi Lemak Sotong and Hainanese Chicken Rice

1) Nasi Lemak Sotong
The most time-consuming part is to prepare the sambal sotong (spicy squid) from scratch. Using shallots, onion, garlic, ginger, turmeric powder and Cili Boh, ground finely with food processor. Measurement? Agak-agak bah~

2) Hainanese Chicken Rice
The most essential part is getting a good "Grade A" Corn Feed Chicken, which has great texture and flavor over "normal" chicken meat. And unlike those "normal" chicken, the Corn Feed Chicken has yellowish skin.
Tell you a secret, I just threw everything - chicken whole leg, 2 cups of rice, 1 teaspoon of salt, Pandan leaf and fried shallots onto a rice cooker, and press "cook". As simple as that!
Ginger dip is a must for Hainanese Chicken Rice, throw 2x finger-size ginger into the food processor / blender, let the machine to the chopping job.
